Stewed Apples             Total time: 10 minutes             Cooking Time: 5 minutes

 

Ingredients

  • 1 cup boiling water
  • 1 medium apple diced (author suggests Fuji as a good balance of sweet, sour and crunch)
  • 5 cloves (whole not ground)
  • ¼ teaspoon powdered cinnamon
  • Fresh ginger (about 5-6 slices equal to about the size of a nickel)

Slow Cooker Creamy Pumpkin Spice Oatmeal *                      Serves 6

Ingredients

  • Cooking spray, olive oil, or coconut oil
  • 2 tablespoons unsalted butter, divided
  • 1 1/2 cups steel-cut oats
  • 1 (15-ounce) can pumpkin purée
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 4 cups water
  • 2 cups whole milk
  • 1/4 cup maple syrup
  • 1 (3-inch) cinnamon stick
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • For serving: heavy cream, ground cinnamon, and additional maple syrup (optional)
